Pierre Gignac was born in Montréal, Canada. After graduating from the Institut d’Hôtellerie et de Tourisme du Québec, Pierre apprenticed at the bastion of classic French cuisine, Montréal restaurant Chez La Mère Michel. Pierre’s first chef’s position was at trendy Prego, an Italian eatery favored by Montréal’s celebrities, politicians, and dining elite. Chef Pierre furthered his education under Austrian chef Heinz Kattenfeld at renowned Amici restaurant in Winnipeg, Canada. After extensive travels in Asia and Europe, Pierre chose to open his first restaurant in Ogunquit, Maine, 98 Provence. Pierre’s southern French bistro pleased locals, tourists, and critics for 18 years, until it closed in 2012.
