Guy Hernandez was trained as an architect, studying architectural design and structural engineering at Princeton University and receiving his Masters of Architecture from Washington University in St. Louis. After moving to Maine in 2001, he learned artisan baking with Josh Potocki and Allison Reid. In 2006 he and his wife, Stella, opened Bar Lola on Munjoy Hill, just two blocks from their home. Guy has received no formal culinary training. He sees learning opportunities in all situations and fed his curiosity with a constantly changing menu of carefully crafted dishes at Bar Lola. Guy and Stella’s latest project is a new restaurant on Munjoy Hill, Lolita, that will build on their experiences while providing new opportunities to grow and challenge themselves. There, Guy will continue to makes a point of buying from people he knows directly and creating dishes that he sees as complete not when nothing else can be added to them, but instead when nothing else can be taken away.
